# Ingredients:

01 - 1 and a half cups of plain white rice, uncooked.
02 - Two sticks of cinnamon from Mexico.
03 - Four cups of water, heated.
04 - Two cups of milk or almond milk.
05 - Two teaspoons of vanilla essence.
06 - Two teaspoons of powdered cinnamon.
07 - Some sugar — about 1/3 to 1/2 cup — depending on how sweet you like it.

# Instructions:

01 - Put the uncooked rice, 2 cups of hot water, and the cinnamon sticks into a blender.
02 - Blend the mix until the cinnamon sticks and rice are coarsely ground, forming a fragrant, gritty liquid.
03 - Pour in the remaining 2 cups of hot water and blend once more until it’s fully combined.
04 - Move the mix into a lidded container or jug and pop it in the fridge. Keep it there overnight (or at least for 8 hours) so the taste develops nicely.
05 - Run the rice mixture through either a fine mesh strainer or some cheesecloth into a clean jug, throwing away any leftover bits.
06 - Stir in the milk, sugar, powdered cinnamon, and vanilla. Adjust how much sugar you add so it’s just how you like it.
07 - Let your Horchata chill in the fridge until it’s icy cold and ready to enjoy.
08 - Give it a last stir before serving. Pour over some ice, and enjoy the cooling, sweet drink.
