Hoisin Beef Noodles (Print Version)

# Ingredients:

01 - 4 green onions, finely sliced
02 - 1 large carrot, cut into matchsticks
03 - 3 garlic cloves, minced
04 - 4 tablespoons hoisin stir-fry sauce
05 - 2 tablespoons soy sauce (light or dark, your choice)
06 - 500 grams of beef cut into thin slices (such as flank, sirloin, or ribeye)
07 - 2 tablespoons cooking oil (vegetable works great)
08 - 1 tablespoon of ginger, freshly grated
09 - 400 grams of rice or egg noodles, as preferred
10 - 1 tablespoon sesame seeds (optional for topping)
11 - 1 red bell pepper, sliced thinly
12 - A handful of cilantro, roughly chopped (optional, for serving)
13 - A pinch of chili flakes for heat (optional)

→ Optional Additions

14 - 200 grams of bok choy, broken into bite-sized pieces
15 - 1 teaspoon of fish sauce (if desired)
16 - 100 grams of baby corn, halved lengthwise
17 - 1 lime, sliced into wedges for squeezing over the dish
18 - 2 tablespoons of peanuts, crushed (to sprinkle on top)
19 - 200 grams of either shiitake or button mushrooms, sliced
20 - 100 grams of snow peas
21 - 1 tablespoon sesame oil (for finishing the dish)

# Instructions:

01 - Chop up your ingredients—slice the beef, mince the garlic, grate that ginger, and prep the veggies. Having it all ready makes cooking a breeze!
02 - Boil a pot of water, toss in your noodles, and follow what the packet says. Once done, drain them, rinse under cool water, and set aside.
03 - Mix ginger, garlic, soy sauce, and hoisin sauce in a small bowl. Coat the beef in this and let it sit for a while, at least 15 minutes.
04 - Warm up a skillet or wok with a bit of oil. Toss in the carrots, bell peppers, and any extras you picked. Stir them around for 3-4 minutes until they soften a little.
05 - Move your veggies to one side of your pan. Use a bit more oil and add the marinated beef to the skillet. Stir it around for 5-7 minutes or until it's all browned and cooked through.
06 - Mix the noodles into the skillet, along with any leftover marinade. Stir well so everything is coated. Toss in the green onions and give it another 2 minutes.
07 - If you're using it, drizzle sesame oil over the noodles and mix it all up. Sprinkle sesame seeds, cilantro, and chili flakes on top, and serve it right away.

# Notes:

01 - To keep your veggies crisp and beef tender, stir-fry on high heat and give things space in the skillet. Overcrowding can make it soggy.
