Chicken Mushroom Pasta (Print Version)

01 - 1 tbsp olive oil
02 - Salt and pepper to taste
03 - 2 cups sliced mushrooms
04 - 8 oz pasta (fettuccine or penne)
05 - 1/4 cup Parmesan cheese, finely grated
06 - 1/2 cup chicken broth
07 - 2 chicken breasts, cut into strips
08 - 2 garlic cloves, chopped up
09 - 1/2 cup heavy cream
10 - Fresh parsley for sprinkling

# Instructions:

01 - Cook the pasta in boiling water following the instructions on the package. Drain the water and leave it aside.
02 - Heat up some olive oil in a big skillet over medium heat. Toss in the chicken pieces and cook them for about 7 to 8 minutes until they’re fully done and golden. Pull them out and place them somewhere else.
03 - Using the same pan, toss in the garlic and mushrooms. Cook them for around 5 minutes until they soften up.
04 - Pour in the chicken broth and let it simmer until it reduces a bit, about 3–4 minutes. Then mix in the heavy cream and Parmesan cheese, stirring for 2 minutes until it thickens.
05 - Throw the pasta and chicken back into the pan, mixing it all so the sauce coats everything really well. Add salt and pepper if needed.
06 - Sprinkle parsley on top and enjoy it warm.
