Healing Chicken Soup (Print Version)

# Ingredients:

01 - 2 boneless, skinless chicken breasts.
02 - 2 fresh thyme sprigs.
03 - 5 cups chicken broth (low sodium).
04 - ¼ cup chopped parsley.
05 - 2 fresh tarragon sprigs.
06 - 1 bay leaf.
07 - 4 medium peeled and sliced carrots.
08 - 3 sliced celery stalks.
09 - 3 peeled and sliced parsnips.
10 - 1 diced onion (medium, about half).
11 - 4 minced garlic cloves.
12 - ½ teaspoon black pepper.
13 - 1 leek, halved, sliced, and washed.
14 - 1 teaspoon kosher salt.
15 - 2 tablespoons olive oil (extra virgin).

# Instructions:

01 - Start by warming the oil and toss in carrots, leek, celery, onion, and parsnips for 4-5 minutes. Throw in garlic, pepper, and salt for just another minute.
02 - Add chicken, herbs, and broth. Let it boil, cover, and let simmer for 15 minutes till the chicken's fully cooked through.
03 - Take the chicken out and shred it up. Drop it back into the pot, and give it another 1-2 minutes before moving on.
04 - Fish out the bay leaf and herb sprigs. Mix in parsley and dish it up.
