Sort out your toppings like burger sauce, shredded lettuce, pickles, and tomato slices in advance. It'll make things easier later on.

Use a paper towel to dry the ground chicken. Form it into 2-ounce portions, keeping the shape loose and not too compact. Sprinkle a little salt and pepper on each one.

Spread some mayo on the cut sides of each bun for a nice golden finish. Heat up a skillet on medium-high, lightly grease it with some oil or spray, and toast the buns. Put 'em aside once done.

Place the chicken portions on the heated skillet. Cover each with a small square of parchment paper, and use a spatula to press them into thin patties. Take off the parchment and sprinkle on a little more salt and pepper.

Cook the patties for about 2-3 minutes per side. Flip them when the underside turns golden. Add cheese slices on half the patties and cook for another minute or so. Stack each plain patty on top of a cheesy one.

Layer the double-stacked patties onto the toasted buns. Top with your prepped toppings, and dig in while they're hot!
