Heat a large skillet on medium and cook the beef until it's browned, breaking it apart as you go.

Add cabbage, taco spices, onion bits, and water into the skillet. Stir everything until it’s nicely mixed together.

Let it all simmer, giving it an occasional stir, until the cabbage is tender but still crunchy. This'll take around 5-7 minutes.

Scatter the shredded cheese on top. Cover the skillet and let it cook for a few minutes, just until the cheese melts down.

Take it off the heat and dig in while it’s still steaming hot.
