Ground Beef Quesadillas (Print Version)

# Ingredients:

01 - 8 big flour tortillas.
02 - 3 cups shredded cheese.
03 - 1 medium red bell pepper, chopped.
04 - 1 small jalapeño, diced and deseeded.
05 - 1 pound ground beef.
06 - 1 small onion, diced.
07 - 2 cloves garlic, minced.
08 - 2 tablespoons olive oil.
09 - 1 teaspoon ground cumin.
10 - 1 teaspoon chili powder.
11 - 1 teaspoon smoked paprika.
12 - 1/2 teaspoon dried oregano.
13 - 1/2 teaspoon salt.
14 - 1/4 teaspoon black pepper.
15 - 1/4 cup water or beef broth.
16 - 2 tablespoons tomato paste.

# Instructions:

01 - Heat up oil, then cook onion and ground beef 'til browned over medium heat.
02 - Stir in garlic and bell peppers for 3 minutes, toss in spices, and cook just 1 minute more.
03 - Pour in tomato paste and liquid, let it simmer for a few minutes until it thickens up.
04 - Spread beef mix and some cheese on one side of each tortilla, then fold them over.
05 - Cook the folded tortillas in a hot skillet for about 2 minutes on each side until crispy and gooey inside.
06 - Cut the cooked quesadillas after resting for a couple of minutes. Add your favorite extras and enjoy.

# Notes:

01 - The beef mixture can be prepped earlier.
02 - Keep the heat on medium for even cooking.
03 - Hold quesadillas warm in a 200°F oven before serving.
