Herb Chicken Salad (Print Version)

# Ingredients:

→ Chicken

01 - 1 tsp paprika
02 - Salt and black pepper to taste
03 - 2 tbsp olive oil
04 - Fresh herbs (parsley, chives)
05 - 2 boneless chicken breasts
06 - 1 tsp garlic powder

→ Dressing

07 - Salt and pepper to taste
08 - ½ cup Greek yogurt or sour cream
09 - 1 tbsp chopped chives
10 - 1 tbsp lemon juice

→ Salad

11 - Optional: roasted sweet potatoes, sliced radish, or cucumbers
12 - Mixed greens (lettuce, arugula, spinach)

# Instructions:

01 - Cook the chicken at 400°F (200°C) for 20-25 minutes. Make sure it's fully done.
02 - Coat the chicken in olive oil, garlic powder, paprika, salt, and pepper. Let it sit for at least 30 minutes.
03 - Slice the cooked chicken, lay it over the greens, and drizzle on the dressing. Add some herbs for a fresh touch.
04 - Combine all the dressing ingredients in a bowl and pop it in the fridge to cool.
05 - Toss the greens with any extras like radish slices or roasted sweet potatoes.
