Greek Potato Dish (Print Version)

# Ingredients:

→ Base

01 - 1 cucumber, chopped into small pieces after removing seeds
02 - 1/2 cup cherry tomatoes, sliced in half
03 - 1/2 red onion, sliced into thin pieces
04 - 1/2 cup Kalamata olives, pitted and cut into slices
05 - 1 kg potatoes, peeled and cut into cubes

→ Herbs

06 - 1/4 cup of finely chopped dill
07 - 1/4 cup of parsley leaves, chopped

→ Dressing

08 - 2 tablespoons of red wine vinegar
09 - 1/3 cup of good quality extra virgin olive oil
10 - Salt and pepper based on your taste
11 - 1 teaspoon Dijon mustard for that tangy pop

→ Garnish

12 - 100 g of crumbled feta cheese (optional)

# Instructions:

01 - Cut the potatoes into cubes and boil them in salty water for 10-15 minutes until tender. After draining, let them sit for a few minutes to cool.
02 - Grab a large mixing bowl and whisk the olive oil, red wine vinegar, mustard, salt, and pepper until smooth.
03 - Toss the warm potato cubes into the dressing, stirring gently so they soak up the flavors.
04 - Mix in the red onion slices, olives, halved cherry tomatoes, cucumber pieces, parsley, and dill with the dressed potatoes.
05 - If you want, gently fold the crumbled feta cheese into the potato mix.
06 - Cover the salad and pop it into the fridge for at least an hour to let all those flavors come together.
07 - Have a quick taste, adjust the seasoning if needed, and serve it up! Add some extra herbs on top if you'd like.
