Greek Meatball Bowl (Print Version)

# Ingredients:

→ Meatballs

01 - 450g beef, minced
02 - 60ml parsley, finely chopped
03 - 5g oregano, dried
04 - 2.5g cinnamon powder
05 - 1.25g black pepper, ground
06 - 60g breadcrumbs
07 - 60g Parmesan, shredded
08 - 5g garlic powder
09 - 2.5g cumin powder
10 - 1.25g salt
11 - 30ml olive oil

→ Bowl Components

12 - 1/2 red onion, thinly sliced
13 - 120ml tzatziki sauce
14 - 15ml lemon juice, fresh
15 - 200g white rice, cooked
16 - 150g cherry tomatoes, cut in half
17 - 60g Kalamata olives, sliced
18 - 1 cucumber, cut into rounds

# Instructions:

01 - Turn the oven on to 200°C and let it heat up.
02 - Mix minced beef, breadcrumbs, parsley, Parmesan, garlic powder, oregano, cumin, cinnamon, salt, and pepper in a large bowl until everything blends together well.
03 - Shape the mixture into small balls about 2.5-4cm in size.
04 - Put the meatballs onto a baking tray lined with parchment paper, then drizzle them lightly with olive oil.
05 - Cook meatballs in the warmed oven for 15-20 minutes until they're golden and fully done.
06 - As the meatballs bake, mix the cherry tomatoes, cucumber slices, red onion, and olives in a medium bowl.
07 - After baking, let the meatballs sit for 3-5 minutes to cool slightly.
08 - Scoop some cooked rice into each bowl as a base.
09 - Lay the veggie mix over the rice and place a few meatballs on top.
10 - Pour tzatziki sauce over everything, squeeze on some lemon juice, and dig in right away.

# Notes:

01 - To get the best flavor, make the meatballs a day in advance and warm them up before eating.
02 - You can use store-bought tzatziki or make your own with Greek yogurt, cucumber, garlic, and herbs.
