Golden Beet Stacks (Print Version)

# Ingredients:

→ Beets and Dairy

01 - 2 red beets, roasted and cut into thick slices about ½-inch wide
02 - 3 golden beets, roasted and chopped into ½-inch rounds
03 - 1 burrata ball, torn into soft, creamy chunks

→ Toppings and Garnish

04 - Zest from 1 orange
05 - A quarter cup of toasted pistachios, roughly chopped
06 - 1 tablespoon of honey
07 - A tablespoon of good-quality olive oil
08 - ½ teaspoon of flaky sea salt
09 - ½ teaspoon of ground black pepper
10 - Leaves from fresh thyme

# Instructions:

01 - Heat your oven to 200°C (400°F). Wrap each beet individually using foil, place them on a baking pan, and bake for about 45 to 50 minutes till they're soft enough to pierce with a fork. Once cool, peel the skin and slice into ½-inch thick pieces.
02 - Start with a slice of golden beet at the bottom. Scoop a bit of burrata on top, then add a slice of red beet. Keep layering in this order, and finish with a little burrata on top.
03 - Scatter the toasted pistachios over the beet stacks. Drizzle some olive oil and honey. Sprinkle the orange zest, some sea salt, and a touch of black pepper.
04 - Add a handful of fresh thyme leaves on top and serve straight away.

01 - Try roasting the beets with a splash of vinegar or a sprig of rosemary for even more flavor.
