Goat Cheese Cherry Toast (Print Version)

# Ingredients:

→ Base

01 - Half an inch thick slices of baguette (12 slices total)
02 - 2 teaspoons of good extra virgin olive oil

→ Toppings

03 - 24 halved cherries, fresh or thawed from frozen
04 - 1 tablespoon and 1 teaspoon honey
05 - 1 piece of rosemary sprig, leaves removed
06 - A quarter cup each of creamy goat cheese and cream cheese
07 - Half a teaspoon of flaky salt
08 - 1 tablespoon of balsamic glaze, store-bought or homemade

# Instructions:

01 - Brush the slices of bread with olive oil, then bake at 375°F for 7-8 minutes. Make sure to flip them halfway through. When done, the slices should feel crunchy outside but stay soft inside.
02 - Lay the halved cherries with their cut side facing up on parchment paper over a baking tray. Sprinkle a bit of rosemary and olive oil before roasting for 5-7 minutes. Toss the rosemary sprig after roasting.
03 - Blend the goat cheese, cream cheese, a teaspoon of honey, half a teaspoon each of lemon juice and zest, using a blender or food processor, until smooth and fluffy.
04 - Spread the cheese mixture over each toasted slice. Top with 2-3 cherry halves, a drizzle of honey and balsamic glaze, and a sprinkle of rosemary and sea salt as garnish.

# Notes:

01 - Store roasted cherries in the fridge for up to 3 days.
02 - The cheese mixture can be prepped ahead and kept in a sealed container in the fridge for up to 5 days.
