Brush the slices of bread with olive oil, then bake at 375°F for 7-8 minutes. Make sure to flip them halfway through. When done, the slices should feel crunchy outside but stay soft inside.

Lay the halved cherries with their cut side facing up on parchment paper over a baking tray. Sprinkle a bit of rosemary and olive oil before roasting for 5-7 minutes. Toss the rosemary sprig after roasting.

Blend the goat cheese, cream cheese, a teaspoon of honey, half a teaspoon each of lemon juice and zest, using a blender or food processor, until smooth and fluffy.

Spread the cheese mixture over each toasted slice. Top with 2-3 cherry halves, a drizzle of honey and balsamic glaze, and a sprinkle of rosemary and sea salt as garnish.
