Ginger Lime Pork Rice (Print Version)

# Ingredients:

→ Pork Mixture

01 - 1½ pounds ground pork
02 - 1 tablespoon sriracha
03 - 1 tablespoon olive oil
04 - ⅓ cup packed light brown sugar
05 - 3 tablespoons lime juice
06 - Fine sea salt and black pepper (add to taste)
07 - 4 cloves garlic, minced up
08 - 3 scallions, sliced thin (separate the white and green parts)
09 - 1½ tablespoons fresh ginger, finely grated or minced

→ Toppings

10 - Fresh herbs (Thai basil, cilantro, and/or mint)
11 - Crushed peanuts
12 - Lime wedges
13 - Coconut rice (1 batch)

# Instructions:

01 - Make coconut rice. You can use your favorite recipe or follow the directions on the package.
02 - In a big sauté pan over high heat, warm up the olive oil. Add the white part of the scallions, garlic, and ginger. Stir around for about 1-2 minutes until it smells good.
03 - Toss the pork into the pan. Break it up as you go and cook until there's no pink left.
04 - Pour in the lime juice, brown sugar, and sriracha. Stir so the pork's coated well. Let it sit and caramelize for 2 minutes, stir, and let it brown for another 1-2 minutes.
05 - Taste the pork and add salt, pepper, or more sriracha if you like. Serve it over the coconut rice and sprinkle on the green scallions, nuts, herbs, and lime.
