German Chocolate Pound Cake (Print Version)

# Ingredients:

→ Cake

01 - 1 teaspoon salt (6g)
02 - 1/2 cup sour cream, room temperature (128g)
03 - 2 cups all-purpose flour (250g)
04 - 2 cups granulated sugar (400g)
05 - 1/2 cup buttermilk, room temperature (120g)
06 - 3/4 cup unsweetened cocoa powder (60g)
07 - 1 cup warm water (240g)
08 - 2 large eggs, room temperature (112g)
09 - 1/2 cup mini chocolate chips (90g, optional)
10 - 1 teaspoon instant espresso powder (2g, optional)
11 - 2 teaspoons vanilla extract (8g)
12 - 1 1/2 teaspoons baking soda (9g)
13 - 1 cup unsalted butter, melted and cooled (226g)

→ Coconut-Pecan Topping

14 - 1 teaspoon vanilla extract (4g)
15 - 2/3 cup packed brown sugar (133g)
16 - 2 large egg yolks (36g)
17 - 1/2 cup evaporated milk (125g)
18 - 1 cup chopped pecans (110g)
19 - 1/4 cup unsalted butter (56g)
20 - 1 cup sweetened shredded coconut (100g)
21 - 1/2 teaspoon salt (3g)

→ Chocolate Glaze

22 - 1/3 cup heavy cream (80g)
23 - 1/2 cup chocolate chips (90g)

# Instructions:

01 - Set your oven to 350°F. Spray the inside of a 10-inch Bundt pan. In one bowl, mix together all the dry ingredients. Stir the espresso into the warm water.
02 - Into the espresso mixture, stir in the buttermilk, sour cream, melted butter, and vanilla. Break in the eggs and mix well.
03 - Blend the wet and dry mixtures together until smooth. If using chocolate chips, gently fold them into the batter. Pour the mix into the prepared pan.
04 - Pop it into the oven and bake for 45–55 minutes. It’s ready when a toothpick comes out with just a crumb or two. Let it cool for 15 minutes in the pan before flipping it out.
05 - Heat the milk, yolks, sugar, butter, and salt, stirring until it thickens. Toss in the pecans, coconut, and vanilla at the end and stir to combine.
06 - Pour the warm cream over your chocolate chips, let it sit briefly, then stir till it’s smooth. Spread the coconut topping on the cake, and drizzle the glaze over everything.
