In a small bowl, stir together water, soy sauce, and cornstarch until blended well. Put it aside for later.

Melt butter or warm oil in a big pan over medium-high heat. Stir in chopped garlic and cook for about 30 seconds until you can smell it.

Throw in the carrot slices and cook for a couple minutes, moving them around so they don't stick.

Toss the broccoli pieces and mushrooms into the pan. Let them cook for 3 to 4 minutes, keeping them crisp but tender.

Drizzle the ready sauce over the veggies. Give it a toss so everything is coated and cook for about one more minute until the sauce thickens slightly. Sprinkle with salt and pepper.

Move the stir-fried veggies to a plate. Sprinkle sesame seeds over the top if you'd like and serve while it's hot.
