Butter Steak Bites (Print Version)

# Ingredients:

01 - 1/4 cup butter or ghee, split into 2 parts.
02 - 1 tbsp olive oil.
03 - 1-pound Yukon gold potatoes, diced into half-inch cubes.
04 - Three garlic cloves, finely chopped.
05 - 1 tsp dried thyme leaves.
06 - 1/2 tsp oregano (dried).
07 - 1/2 teaspoon sea salt, and extra if needed.
08 - 1/4 tsp black pepper, adjust as needed.
09 - Around 1.25 pounds of sirloin steak, diced into 1/2-inch cubes.

# Instructions:

01 - Place the cast iron pan on medium heat. Pour in olive oil and half of your ghee.
02 - Toss in the potatoes, garlic, and seasonings. Stir every minute or two while cooking for about 8–10 minutes until they're soft and golden.
03 - Remove potatoes from the skillet and keep them off to the side.
04 - Turn the heat to medium-high, add your leftover ghee, and put in the steak. Let it sear for 2 minutes before you move it around.
05 - Add potatoes back in with the steak, give everything a gentle toss, adjust the seasoning, and it's ready to eat.

# Notes:

01 - Chop the potatoes into uniform-sized pieces.
02 - Let the steak sear completely before you stir it.
03 - Any smaller variety of potatoes can work for this.
