Honey BBQ Beef Tacos (Print Version)

# Ingredients:

→ Beef Filling

01 - 450 g beef strips or ground beef
02 - 28 g butter, unsalted
03 - 2 garlic cloves, minced finely
04 - 80 ml BBQ sauce
05 - 60 ml honey
06 - 1 tsp paprika, smoked
07 - Salt, adjust to taste
08 - Black pepper, add as needed

→ Taco Sauce

09 - 120 ml mayo
10 - 15 ml BBQ sauce
11 - 30 ml honey
12 - 0.5 tsp paprika, smoked

→ Assembly

13 - 100 g cheddar cheese, shredded
14 - 6 taco tortillas, soft
15 - Cilantro, chopped (optional)

# Instructions:

01 - Heat butter in a big pan on medium heat. Toss in the garlic and cook for 30 to 60 seconds, making sure it smells aromatic.
02 - Add either the beef strips or ground meat to the pan. If using ground beef, break it up as it cooks. Let it brown completely, and drain off any grease, if there's too much.
03 - Pour in the BBQ sauce, honey, paprika, salt, and pepper. Stir it all together, and then let it simmer for around 2–3 minutes, just until the sauce thickens and sticks well to the meat.
04 - In a bowl, mix mayo, honey, BBQ sauce, and smoked paprika. Stir it all up until it's smooth and creamy, then set aside for when you're ready to serve.
05 - Pop the soft tortillas into a dry skillet or the microwave, warming them until they're soft and flexible.
06 - Scoop the beef mixture into the tortillas. Top it with the taco sauce, sprinkle on the shredded cheese, and add some cilantro if you want extra freshness.
07 - Fold the tacos and enjoy them immediately while everything's nice and warm.

# Notes:

01 - Keep the beef mix drier to avoid making the tacos soggy when you stuff them.
02 - If you're prepping ahead, keep tortillas warm by wrapping in foil and placing in a low oven.
