Chop the onion and peppers into small chunks. Use the bigger holes on your grater to shred the cheese. Break the Fritos into smaller pieces, however you like them.

If you're making it ahead, don't mix anything yet. Just add the mayo right before you plan to eat.

Throw everything into a bowl, give it a good mix, and it's ready to eat.
