Fresh Prawn Bites (Print Version)

# Ingredients:

→ Prawns

01 - 600g cooked prawns, peeled
02 - 1 kg raw prawns with shell (gives about 600g peeled)
03 - 3 cups chopped iceberg lettuce
04 - Parsley, finely chopped (if you like)
05 - Lemon wedges

→ Sauce

06 - 2/3 cup mayo (whole egg)
07 - 1 teaspoon freshly grated horseradish
08 - 1 tablespoon of ketchup
09 - Small dash of Tabasco sauce
10 - Pinch of cayenne spice
11 - 1 teaspoon Worcestershire sauce

# Instructions:

01 - If you're working with shell-on prawns, peel them first but keep a few unpeeled ones to make it look pretty if you'd like.
02 - In a tiny bowl, mix together the mayo, ketchup, Worcestershire, horseradish, cayenne, and Tabasco.
03 - Coat your peeled prawns in the sauce by tossing them until they're evenly covered.
04 - Grab some serving bowls or even martini glasses, add a layer of the chopped lettuce, and spoon the sauced-up prawns on top.
05 - Decorate it with parsley (if using) and squeeze some lemon on top. Serve it right away.

# Notes:

01 - To get juicier prawns, peel them fresh yourself instead of buying pre-packed.
02 - Whole egg mayo gives a creamier texture—find it in supermarkets.
03 - The sauce can sit in the fridge for up to 3 days, just leave assembly until serving.
