Onion Butter Rice (Print Version)

# Ingredients:

→ Base Ingredients

01 - 2 cups chicken or beef broth
02 - 1 medium yellow onion, sliced thinly
03 - 2 tablespoons butter, unsalted
04 - 1 cup white rice, long-grain

→ Seasonings

05 - Salt and pepper to your taste
06 - 1/2 teaspoon thyme, dried
07 - 1/2 teaspoon garlic powder

→ Finishing Touches

08 - A handful of fresh parsley, chopped for garnish
09 - 1/4 cup Parmesan cheese, grated (optional)

# Instructions:

01 - Heat up the butter on medium in a saucepan. Sprinkle in a little salt and toss in the onion slices. Stir often until the onions are golden and caramelized, which takes about 15 minutes.
02 - Mix the rice into the pan with the onions and coat it with the butter. Let it lightly toast for about 2-3 minutes while stirring.
03 - Stir in the thyme, garlic powder, and broth. Bring it to a boil, then lower the heat to keep it simmering. Cover and let it cook for 18-20 minutes, or until the rice is cooked and the broth is absorbed.
04 - Take the pan off the heat and fluff the rice with a fork. Mix in Parmesan if you'd like, and adjust the seasoning with extra salt and pepper. Add parsley on top and serve while it's warm.

01 - For creamier rice, mix in 2 tablespoons of heavy cream before eating.
02 - To avoid too much salt, pick low-sodium broth.
03 - This goes great with roasted chicken, steak, or even on its own as a vegetarian option.
