Fig Cranberry Nut Roll (Print Version)

# Ingredients:

01 - 4 oz goat cheese, brought to room temperature
02 - 8 oz cream cheese, brought to room temperature
03 - 1/4 cup chopped pistachios
04 - 1/4 cup chopped dried figs
05 - 1/4 cup chopped cranberries
06 - 1 teaspoon maple syrup or honey
07 - Extra pistachios, cranberries, and figs for rolling
08 - Crackers, vegetables, or fruit for serving

# Instructions:

01 - Blend the goat cheese, cream cheese, figs, cranberries, pistachios, and honey or maple syrup in a medium bowl until everything looks smooth.
02 - Scoop the mixture onto plastic wrap, shape it into a log, wrap it snugly, and pop it in the fridge to firm up for around an hour.
03 - Lay out the extra fruit and nuts on a plate. Unwrap the log and roll it in the chopped mixture, pressing gently so it sticks all over.
04 - Set the coated cheese log on a platter and surround it with crackers, veggies, or fruit for an easy appetizer. Dig in!
