Slice your cabbage into slim strips about ¼ to ½ inch wide. If your carrots are whole, grate or julienne them with a box grater or food processor.

In a large pan heated over medium, break apart the ground pork or turkey as it cooks for 5-6 minutes until browned all over.

Pour 1 tablespoon of oil into the pan; toss in the onion and cook until soft. Mix in shredded carrots, garlic, and grated ginger. Pour some chicken broth to loosen any bits stuck to the pan, then mix in the cabbage, soy sauce, vinegar, salt, and pepper.

Turn the stove to medium-low heat. Put a lid on the pan and let it cook for 12-15 minutes. Stir once in a while until the cabbage gets nice and soft. Mix in sesame oil before serving and, if you'd like, sprinkle with green onions, sesame seeds, or a pinch of red pepper flakes.
