Easy Sausage Sandwiches (Print Version)

01 - ½ yellow onion, sliced into ¾-inch sections
02 - 1 red bell pepper, chopped into ¾-inch strips
03 - 1 tablespoon extra-virgin olive oil
04 - 1 green bell pepper, sliced into ¾-inch pieces
05 - ½ teaspoon sea salt
06 - 1 (20-ounce) package of mild Italian pork sausage, 5 links
07 - 5 hoagie rolls, toasted up nicely

→ Honey Mustard Sauce

08 - ⅓ cup mayo
09 - 1 tablespoon honey
10 - 1 teaspoon soy sauce
11 - 1 tablespoon whole grain mustard

# Instructions:

01 - Turn your oven to 425°F and make sure a rack is set right in the middle.
02 - Toss the bell peppers and onion onto a big sheet pan with high edges. Coat everything by drizzling the olive oil, sprinkle the salt, and mix it all up.
03 - Nestle the sausages between the veggies and roast them for about 30 minutes until everything's heated (or fully cooked if your sausages are raw).
04 - In a little bowl, stir together mayo, mustard, honey, and soy sauce until blended.
05 - Stick each sausage into a hoagie roll, pile on the veggies, and pour the honey mustard sauce over it. Serve while warm.
