Set your oven to 400°F (200°C) to get it ready.

Break apart the sausage as you cook it in a hot skillet over medium heat. Stir it for around 10 minutes, or until all pink is gone. Put it aside for later.

Mix together water and pancake mix in a big bowl. Stir gently so the batter stays light and fluffy.

Carefully combine the shredded cheese, crumbled sausage, and maple syrup into the batter. Don’t over-mix.

Drop about a tablespoon of the batter into each mini muffin slot.

Cook in the oven for 10 to 15 minutes until they're golden and fully baked through.

Keep baking until all batter is used, making roughly 48 mini pancake bites. Enjoy warm with extra maple syrup for dipping.
