Easy Indian Chicken Curry (Print Version)

# Ingredients:

01 - 1 small onion, diced.
02 - 3 tablespoons curry powder.
03 - 3 tablespoons olive oil.
04 - 2 chicken breasts, boneless and cut into small pieces.
05 - 1 teaspoon paprika.
06 - 1 teaspoon cinnamon powder.
07 - ½ teaspoon grated ginger.
08 - ½ teaspoon granulated sugar.
09 - ½ teaspoon cayenne.
10 - Salt as needed.
11 - 1 bay leaf.
12 - 1 tablespoon tomato puree.
13 - 1 cup plain yogurt.
14 - ¾ cup coconut milk.
15 - ½ lemon, squeezed for juice.
16 - 2 cloves garlic, finely minced.

# Instructions:

01 - Start by warming the oil in a skillet. Toss in the onions and sauté till golden. Mix in garlic, ginger, curry powder, cinnamon, paprika, bay leaf, and a pinch of salt. Let it cook for 2 minutes.
02 - Pour in the yogurt, coconut milk, tomato paste, and chicken. Bring it to a boil, then turn down the heat to a soft simmer. Let it cook gently for 20-25 minutes.
03 - Take out the bay leaf. Add cayenne and stir in the fresh lemon juice. Let it cook on very low heat for about 5 more minutes.
