In a medium-sized bowl, stir together the flour, salt, and baking powder.

Use your mixer to beat the sugar and butter together until the mix is smooth and fluffy—takes about 2 minutes.

Mix in the egg, vanilla, and almond extract (if using), and keep beating until everything blends well.

Slowly add the dry mixture to the wet one with your mixer on low speed until combined.

Split dough into 2 parts, then roll both to a thickness of roughly a quarter-inch.

Layer the dough between sheets of baking paper and leave it in the fridge for 1–2 hours to cool.

Set your oven to 180°C and get your baking trays ready with parchment paper.

Cut shapes out of the chilled dough and set them 8cm apart on your already-prepped trays.

Pop them in the oven for 11–12 minutes until the edges are just starting to turn golden brown.

Let the cookies sit on the tray for 5 minutes, then move them over to a rack to cool completely.
