Filipino Lumpia Delight (Print Version)

# Ingredients:

01 - 1 lb chicken or pork, ground
02 - 1 cup carrots, shredded
03 - 1 teaspoon sesame oil
04 - 1 teaspoon soy sauce
05 - 1/2 teaspoon salt (adjust as you like)
06 - 1/2 teaspoon black pepper, ground
07 - 1 pack of spring roll sheets (20-25 pieces)
08 - 1 cup green beans, chopped fine
09 - 1/2 cup onions, diced small
10 - 3 minced garlic cloves
11 - 1/4 cup chopped cilantro (leave it out if you prefer)
12 - Enough oil to deep-fry

# Instructions:

01 - Grab a big bowl and toss in the ground meat, green beans, onions, garlic, soy sauce, carrots, sesame oil, a sprinkle of pepper, salt, and cilantro (if you'd like). Stir it all up until it’s evenly combined and ready to go.
02 - Set a wrapper in front of you with a corner pointing your way (like a diamond). Scoop 2 tablespoons of the filling onto the closest corner. Fold the edge over the meat, tighten it up, and roll halfway. Tuck in the sides and keep rolling to finish it off. Use a dab of water to seal the end. Keep doing this until you use up all the wrappers and filling.
03 - Fill your pan with 2 inches of oil and heat it on medium. Put a few lumpia in the pan (don’t overcrowd) and let them fry until they crisp up and turn a nice golden color, about 4 to 5 minutes. Pick them out with a slotted spoon and place on paper towels to drain the extra grease.
04 - Dig in while they’re warm! Pair with sweet chili sauce or vinegar dip for more flavor.
