# Ingredients:

05 - 1/4 cup finely chopped fresh coriander (cilantro).
06 - 3 tablespoons sweet mirin rice wine.
07 - 1/4 cup savory soy sauce.
08 - 1/4 cup granulated sugar.
09 - 1 tablespoon hot Sriracha chili sauce.
10 - 1/4 cup creamy mayonnaise (such as a French brand like Amora).
11 - 1/4 cup olive oil, for frying.
12 - 1 cup panko breadcrumbs for extra crunch.

# Instructions:

01 - Follow the instructions on your rice packet to cook it properly.
02 - Grab a small bowl and mix together the mayonnaise and Sriracha sauce for the spicy mayo.
03 - Heat up the soy sauce, sugar, and mirin in a saucepan and let it reduce into a thick glaze.
04 - In a pan, fry the panko with olive oil until it turns golden and crispy.
05 - Dice up the surimi, cucumber, avocado, and cilantro into small pieces.
06 - Spoon the rice into serving bowls as your base layer.
