Set the oven to 220°C. Cover a baking tray with parchment paper and lightly coat it with olive oil spray.

Put flour in one shallow dish, beaten eggs in a second, and mix panko, Parmesan, paprika, garlic powder, salt, and pepper in a third.

First coat each zucchini stick in flour, dip it into egg, then press it into the breadcrumb mixture to coat well.

Spread the coated zucchini evenly on your baking tray. Spray a little more olive oil over the tops.

Let the zucchini fries bake between 20 and 25 minutes, flipping them halfway so both sides crisp up evenly to a golden finish.
