02 - 1 cup panko breadcrumbs
03 - 2 eggs, large
04 - 1 package fresh tortellini (about 9 oz)

06 - 1/4 teaspoon ground black pepper
07 - 1/2 cup Parmesan cheese, grated
08 - Olive oil for frying
09 - Salt for seasoning
10 - Chopped parsley for topping

# Instructions:

01 - Fill a big pot with salty water and get it boiling. Toss in the tortellini and cook it as the package says, typically 2-3 minutes or till they float. Drain them and let them cool a bit.
02 - In a flat bowl, stir together the breadcrumbs, Parmesan cheese, garlic powder, and pepper.
03 - Put flour into one flat bowl. Beat the eggs in another flat bowl.
04 - First dust a tortellini with flour, then dip it in the eggs, and roll it in the breadcrumb mixture till covered.
05 - Heat olive oil in a frying pan over medium heat until it’s hot and ready.
06 - Cook the coated tortellini in the pan in small batches. Fry for around 2-3 minutes per side until crispy and golden.
07 - Take the fried tortellini out and lay them on a plate lined with paper towels to soak up the oil. Sprinkle salt and parsley on top.
08 - Serve hot with some marinara sauce or any dip you like.

# Notes:

01 - Tortellini will taste best when eaten hot while still crispy.
