Crispy Green Onion (Print Version)

# Ingredients:

→ Base

01 - 5 tbsp of vegetable oil

→ Pancake Batter

02 - 1/8 tsp salt
03 - 1 cup packed green onions
04 - 1 tsp garlic powder
05 - 1 tsp baking powder
06 - 1/4 cup plain flour
07 - 1/4 cup potato starch or cornstarch
08 - 1/2 tsp bouillon powder (chicken flavor)
09 - 1/2 cup ice-cold water
10 - 1/2 tsp onion powder

→ Dipping Sauce

11 - 2 tbsp soy sauce
12 - 1 tbsp finely sliced green onions
13 - 1/2 tbsp sesame oil
14 - 2 tbsp rice vinegar

# Instructions:

01 - Dry the green onions well after washing. Cut them into 1.5-inch pieces after slicing down the middle.
02 - Stir green onions into batter, mixing everything gently until just blended.
03 - Warm up oil in a big non-stick pan. Spread the green onions across the pan, then pour over the batter. Let it cook for about 3 minutes until golden.
04 - Flip it over, drizzle the rest of the oil, and cook the second side for another 2-3 minutes till crunchy.
05 - Serve by chopping into squares or triangles. Combine the dipping sauce ingredients and serve on the side.

# Notes:

01 - Colder water means crispier pancakes.
02 - Rice flour isn’t a great substitute for potato starch.
