Turn the oven on to 400°F (200°C). Cover a baking sheet with parchment.

Mix up the halved potatoes in a big bowl with 1 tbsp olive oil, 2 minced garlic cloves, ½ cup Parmesan, some salt, and pepper. Put them on one side of the baking tray.

Using the same bowl, mix the chicken breasts with the leftover olive oil, garlic, paprika, Italian seasoning, and Parmesan. Lay them next to the potatoes on the tray.

Slide the tray in and bake for about 25-30 minutes. The chicken's temperature should hit 165°F (75°C), and the potatoes should look crisp and golden.

Before serving, sprinkle parsley on top for a touch of freshness.
