Crispy Chicken Croquettes (Print Version)

# Ingredients:

→ Main

01 - 1 teaspoon of black pepper
02 - Salt, sprinkle as needed
03 - ½ cup of shredded cheese
04 - 2 cups of pulled chicken (cooked)
05 - 4 cups of mashed, boiled potatoes

→ Coating

06 - ½ cup of flour for dusting
07 - ½ cup panko crumbs
08 - 2 medium eggs

# Instructions:

01 - Mash the boiled potatoes and shred the seasoned chicken.
02 - In a bowl, stir together the mashed potatoes, chicken, cheese, and some salt and pepper.
03 - Form into 3-inch long rolls, coat first with flour, then dip in egg, and finish with panko crumbs.
04 - Pop them in the freezer for half an hour. Shallow fry in a pan for 5-7 minutes until you see a nice golden color.

# Notes:

01 - Leftovers like cooked chicken or potatoes work well.
02 - These can be prepped a day in advance and stored chilled.
03 - They stay good in the fridge for 3-5 days.
