Air Fryer Tofu (Print Version)

# Ingredients:

01 - 1 pack (16 oz) of firm tofu.
02 - 2 tsp reduced-sodium soy sauce.
03 - 1 1/2 tsp of rice vinegar.
04 - 1 1/2 tsp of toasted sesame oil.
05 - 1 tsp of Sriracha hot sauce.
06 - Grated garlic from 1 large clove.
07 - 1 tsp finely grated fresh ginger.
08 - 2 tsp granulated sugar.
09 - A pinch (1/4 tsp) of black pepper.
10 - 1/4 cup of cornstarch.
11 - Non-stick cooking spray.
12 - Salt, as much or little as you like.
13 - Chopped green onions and sesame seeds for topping.

# Instructions:

01 - Use towels to wrap the tofu and press it down with something heavy, like a pot. Let it sit 15 minutes to squeeze out the water.
02 - In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, Sriracha, ginger, garlic, sugar, and black pepper.
03 - Cut the tofu into 32 small cubes after pressing. Gently toss them in the marinade and let them sit for 15 minutes.
04 - Coat the tofu cubes thinly and evenly by rolling them in cornstarch one at a time.
05 - Turn the air fryer to 400°F to preheat, and lightly coat the basket with cooking spray.
06 - Spread the tofu pieces in one layer. Spray them lightly with oil, cook for 5 minutes, flip them over, spray again, and cook another 5 minutes until golden and crispy.
07 - Add a sprinkle of salt if you like. Top it off with sesame seeds and green onions, then enjoy it warm with a dip on the side if you want.

# Notes:

01 - If you'd like a dipping sauce, simply double the marinade ingredients and set some aside before marinating the tofu.
02 - Leftovers? Keep them in a sealed container in the fridge for up to 4 days.
