# Instructions:

01 - Sprinkle the eggplant pieces with some kosher salt after cutting. Allow them to rest for about 15-30 minutes to release extra liquid. Use paper towels to thoroughly dry them off.
02 - Grab a large bowl and combine the eggplant chunks with avocado oil. Add in the seasonings—smoked paprika, thyme, rosemary, powdered garlic, and kosher salt—and mix until every piece is well-coated.
03 - Heat your air fryer to 400°F. Spread the seasoned eggplant cubes in a single layer in the basket. Let them cook for 18 minutes, shaking the basket once halfway through so they brown evenly.
