Creamy Sweet Cookie Bars (Print Version)

# Ingredients:

01 - 1½ cups white sugar
02 - 2½ cups regular flour
03 - ½ teaspoon sea salt
04 - 1 egg, large, at room temperature
05 - ½ cup sour cream, not low fat, at room temperature
06 - 2 teaspoons pure vanilla
07 - 2 sticks (8 ounces) unsalted butter, softened
08 - 1 tablespoon fresh lemon juice

→ Frosting

09 - ¼ cup colorful sprinkles (optional)
10 - 1 or 2 drops food coloring, liquid or gel (optional)
11 - 2 cups confectioners' sugar
12 - 1 stick (4 ounces) unsalted butter, soft
13 - 1 teaspoon vanilla
14 - 1 small pinch kosher salt

# Instructions:

01 - Set your oven to 350°F. Line a square 9x9 pan with parchment that hangs over the edges. Let the egg, butter, and sour cream warm to room temperature.
02 - Cream butter and sugar together until fluffy. Stir in the egg, vanilla, lemon juice, and sour cream. Sprinkle in salt and flour, mixing until just blended. Spread dough in the prepared pan.
03 - Bake for 30 to 35 minutes, or until lightly golden. Cool in the pan for 10 minutes, then carefully transfer it to a rack to cool all the way.
04 - Whip butter with salt until smooth. Mix in vanilla. Slowly add powdered sugar while beating. For color, mix in a drop or two of food coloring if you'd like.
05 - Spread the frosting on the cooled cookie bars. If desired, sprinkle with rainbow sprinkles. Let sit for 30 minutes at room temp or chill 20 minutes, then slice into 16 squares.
