Veggie Cheese Bake (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 cup shredded cheddar cheese
02 - 3 large eggs
03 - 2 cups frozen mixed vegetables (corn, peas, carrots)
04 - 2 cups cottage cheese

→ Seasonings

05 - Salt and pepper to taste
06 - 1 teaspoon onion powder
07 - 1 teaspoon garlic powder

→ For Baking

08 - 1 tablespoon olive oil for greasing

# Instructions:

01 - Get your oven heated to 190°C (375°F). Coat a 23×23 cm (9×9-inch) pan with some olive oil to stop sticking.
02 - Grab a big bowl and whisk the cottage cheese with the eggs until it's all smooth and blended together.
03 - Toss in the frozen veggies, shredded cheddar, garlic powder, onion powder, and season with salt and pepper. Mix everything up.
04 - Pour the mixture into the greased dish. Spread it out evenly. Bake for 30-35 minutes until it’s golden on top and firm in the center.
05 - Let it cool for a bit, then cut it into squares and dig in.

# Notes:

01 - Swap frozen veggies with fresh ones, but make sure to cook them first to get rid of moisture.
02 - For a creamier result, mix in 2 or 3 tablespoons of sour cream or Greek yogurt.
03 - Store extras in an airtight container in the fridge for up to 4 days.
