Get your oven heated to 190°C (375°F). Coat a 23×23 cm (9×9-inch) pan with some olive oil to stop sticking.

Grab a big bowl and whisk the cottage cheese with the eggs until it's all smooth and blended together.

Toss in the frozen veggies, shredded cheddar, garlic powder, onion powder, and season with salt and pepper. Mix everything up.

Pour the mixture into the greased dish. Spread it out evenly. Bake for 30-35 minutes until it’s golden on top and firm in the center.
