Grab a bowl and mix the cornmeal, flour, and a pinch of salt. In another container, whisk eggs and milk together until smooth. Slowly pour the wet stuff into the dry mix, stirring gently. Add honey and melted butter, and stir till it’s nice and smooth.

Heat up the oven to 450°F (230°C) and slide a popover pan or muffin tray inside while it heats. Once the pan is hot, take it out and grease it well. Fill each cup about two-thirds with batter. Bake for 15 minutes, then lower the heat to 375°F (190°C) and bake another 15 minutes. Don’t peek! Let them cool a bit once they’re out.

Throw soft butter, honey, chopped herbs, and salt into a bowl. Mix everything together till it’s fluffy and creamy.

Spread the whipped butter all over those warm popovers and dig in!
