Cornmeal Popovers Herb Honey (Print Version)

# Ingredients:

→ Cornmeal Popovers Mix

01 - Yellow cornmeal
02 - All-purpose flour
03 - Honey
04 - Whole milk, slightly warm
05 - Eggs
06 - Melted butter
07 - A pinch of salt

→ Whipped Herb Butter

08 - Salted butter at room temperature
09 - Fresh thyme, rosemary, or chives
10 - Salt
11 - Honey

# Instructions:

01 - Grab a bowl and mix the cornmeal, flour, and a pinch of salt. In another container, whisk eggs and milk together until smooth. Slowly pour the wet stuff into the dry mix, stirring gently. Add honey and melted butter, and stir till it’s nice and smooth.
02 - Heat up the oven to 450°F (230°C) and slide a popover pan or muffin tray inside while it heats. Once the pan is hot, take it out and grease it well. Fill each cup about two-thirds with batter. Bake for 15 minutes, then lower the heat to 375°F (190°C) and bake another 15 minutes. Don’t peek! Let them cool a bit once they’re out.
03 - Throw soft butter, honey, chopped herbs, and salt into a bowl. Mix everything together till it’s fluffy and creamy.
04 - Spread the whipped butter all over those warm popovers and dig in!

01 - Keep that oven door closed while baking so the popovers puff up nicely.
