Corned Beef Hash (Print Version)

# Ingredients:

01 - A medium-sized onion, diced finely.
02 - Salted butter, 2 or 3 tablespoons.
03 - Around 2 to 3 cups of cooked potatoes, chopped up.
04 - 2 to 3 cups of corned beef, already cooked and diced.
05 - Freshly chopped sprigs of parsley.
06 - Black pepper and salt, to make it flavorful.

# Instructions:

01 - Melt butter and sauté onion until it gets soft and clear.
02 - Toss in the potatoes and corned beef, making an even layer.
03 - Press them down a bit, letting them brown nicely on the bottom side.
04 - Turn over sections to crisp up the opposite side.
05 - Add a little more butter if it starts sticking to the pan.
06 - Stir in the parsley, then season to your liking with salt and pepper.
07 - Enjoy it warm, preferably served alongside eggs.

# Notes:

01 - Don’t stir too much; let it brown undisturbed.
02 - A cast iron skillet really makes this easier.
03 - You can throw in some leftover cabbage if you’ve got it.
04 - Pair it up with eggs for a complete meal.
