RC Cola Cake (Print Version)

# Ingredients:

→ Pound Cake

01 - 1 cup RC Cola
02 - 1¼ cups soft unsalted butter
03 - 5 room-temp large eggs
04 - 2½ cups white sugar
05 - 3¼ cups plain flour
06 - ¼ tsp table salt

→ Glaze

07 - 2 tsp vanilla flavoring
08 - 3-4 Tbsp milk (adjust to preference)
09 - ½ cup roasted salted peanuts, chopped
10 - 2 cups powdered sugar

# Instructions:

01 - Set the oven to 325°F. Grease a Bundt pan that fits 12-14 cups lightly.
02 - Beat the butter and sugar until they're fluffy. Add one egg at a time, then slowly mix in salt and flour. Stir in RC Cola until smooth.
03 - Pour the batter in the Bundt pan. Bake for about 80-90 minutes at 325°F—when a toothpick comes out clean, you're good.
04 - Give the cake 15 minutes to cool in the pan. Then, flip it out onto a wire rack to cool off completely.
05 - Mix the glaze ingredients, drizzle over the cooled cake, and top with peanuts while it’s still wet.

01 - Room-temp ingredients work better for this.
02 - Tweak milk quantity to get the thickness you want for the glaze.
