Cod Creamy Pepper Sauce (Print Version)

# Ingredients:

→ Fish Prep

01 - Cod fillets, 4 pieces (about 170g each)
02 - Olive oil, 2 tablespoons
03 - Paprika, 1 teaspoon (optional)
04 - Salt and ground pepper, a pinch of each

→ Pepper Sauce Mix

05 - Roasted red peppers, 2 pieces (jarred or homemade)
06 - Minced garlic, 2 cloves
07 - Heavy or coconut cream, 1/2 cup
08 - Chopped onion, 1/4 cup
09 - Oregano, dried, 1/2 teaspoon
10 - Chicken or veggie broth, 1/4 cup
11 - Smoked paprika, 1 teaspoon
12 - Salt and pepper, use to taste
13 - Chopped parsley, a small handful for garnish
14 - Olive oil, 1 tablespoon

# Instructions:

01 - Use paper towels to dab the cod dry. Sprinkle both sides with salt, pepper, and a little paprika, if you're using it.
02 - Warm 2 tablespoons of oil in a big pan on medium heat. Lay the cod fillets in and cook for 3-4 minutes on each side until they're flaky and not see-through. Put them aside after they're done.
03 - In the same pan, toss in a tablespoon of oil. Sauté the garlic and onion for a couple of minutes until they start smelling amazing. Mix in the roasted peppers, smoked paprika, and oregano. Let it cook for a minute or two.
04 - Either use a hand blender right in the pan or move the mix to a blender. Whiz it up until the sauce is silky. If you blended it elsewhere, pour it back into the pan.
05 - Pour in your cream and broth, mix it up, and let it simmer lightly for 3-4 minutes. It'll thicken slightly as it cooks. Taste and adjust the salt and pepper.
06 - Put the fish back into the pan. Spoon the sauce on top of each piece. Let them simmer together for a couple more minutes so the flavors meld. Sprinkle parsley on top before serving.

# Notes:

01 - Swapping in halibut or tilapia works just as well as cod.
02 - A spritz of lemon at the end adds a bright kick of flavor.
03 - Want some heat? Stir in a pinch of chili flakes with the red pepper mix.
