Classic Chicken Parmesan (Print Version)

# Ingredients:

01 - 6 pieces of chicken breast, thinly sliced (about 700 grams).
02 - 3 tablespoons of extra virgin olive oil.
03 - One small yellow onion, finely diced.
04 - 6 garlic cloves, minced.
05 - A large can (800 grams) of crushed tomatoes.
06 - A couple of sprigs of fresh basil.
07 - Salt and black pepper, to taste.
08 - 1 cup of Japanese-style breadcrumbs (panko).
09 - 1 teaspoon of powdered garlic.
10 - 2 cups of grated Parmesan cheese—split into two portions.
11 - 3/4 cup of plain flour.
12 - 2 large eggs.
13 - 1 cup of shredded mozzarella cheese.
14 - Around 1 cup of sunflower oil for frying.
15 - Fresh basil leaves to garnish before serving.

# Instructions:

01 - Cook the onion and garlic in the olive oil until they’re soft.
02 - Pour in the tomatoes and add the basil. Let it simmer for half an hour until it thickens.
03 - Stir together the breadcrumbs, garlic powder, and one portion (1 cup) of Parmesan in a shallow dish.
04 - Get three dishes ready: one for the flour, one for the beaten eggs, and one for the breadcrumb mixture.
05 - Lightly season the chicken with salt and pepper. Then dip each piece in flour, followed by egg, and finally coat it with breadcrumbs.
06 - Warm up the sunflower oil in a sturdy pot to about 175°C (350°F).
07 - Cook each cutlet for about a minute on each side, just until golden brown.
08 - Spoon the marinara sauce over the chicken, then top with a mixture of mozzarella and the remaining Parmesan.
09 - Pop everything under a broiler until the cheese is bubbly and slightly golden.
10 - Sprinkle fresh basil on top and serve with some extra marinara on the side.
