Cinnamon French Toast (Print Version)

# Ingredients:

→ Roll-Ups

01 - 6 pieces of sandwich bread, with the crusts cut off
02 - 1 teaspoon cinnamon, ground
03 - 2 tablespoons butter, unsalted and softened
04 - ¼ cup white sugar

→ French Toast Batter

05 - 2 eggs, large
06 - ½ teaspoon vanilla
07 - ¼ cup milk

→ Topping

08 - 1 tablespoon butter for cooking
09 - ½ teaspoon cinnamon mixed with ¼ cup sugar
10 - Drizzle with maple syrup or a cream cheese glaze

# Instructions:

01 - Use a rolling pin or a spoon to press the bread flat. Spread each slice with a thin layer of butter.
02 - Mix the sugar and cinnamon in a small dish. Sprinkle this over the buttered bread, then roll the slices into tight logs, pressing gently to hold the shape.
03 - Combine milk, eggs, and vanilla in a shallow bowl and whisk until smooth.
04 - Heat 1 tablespoon of butter in a skillet. Dip each roll-up quickly into the egg mix (don’t soak them) then cook over medium heat for 2 to 3 minutes on each side until golden brown.
05 - While the rolls are warm, toss them in the remaining cinnamon sugar to fully coat. Enjoy right away with syrup, powdered sugar, or glaze on top!

# Notes:

01 - Keep in the fridge in an airtight container for no more than 3 days.
02 - Warm them back up in a skillet for 2 minutes or 30 seconds in the microwave.
03 - You can freeze uncooked roll-ups. Fry straight from frozen, adding 2 extra minutes to the cooking time.
