Turkish Eggs Cilbir (Print Version)

# Ingredients:

→ Base

01 - 2 eggs
02 - 1 cup of thick yogurt (Turkish or Greek)
03 - 55g (2 oz) butter

→ Herbs & Seasonings

04 - Salt and black pepper, to your liking
05 - ½ teaspoon of smoked paprika
06 - A small handful of chopped mint leaves
07 - ½ garlic clove, finely grated
08 - A sprinkle (1 teaspoon) of chili flakes
09 - Generous handful of fresh dill, chopped

→ Poaching

10 - 1 tablespoon of vinegar

# Instructions:

01 - Blend yogurt with garlic, dill, and mint. Sprinkle salt and pepper. Mix until smooth.
02 - Heat water with vinegar. Swirl it and drop an egg into the center. Let it poach for 3 minutes if you want soft yolks.
03 - Stir paprika and chili flakes into melted butter. Mix well, then remove from heat.
04 - On a plate, spread out some of the herby yogurt. Add eggs on top, drizzle the spicy butter over them, and sprinkle extra herbs with pepper.

# Notes:

01 - For better eggs, try using the freshest ones you can find.
02 - If you want a milder version, go for sweet paprika.
03 - Start with less garlic, then adjust to your personal taste.
