Cilantro Lime Confetti Orzo (Print Version)

# Ingredients:

01 - Fresh cilantro
02 - Orzo noodles
03 - Lime juice
04 - Cherry or grape tomatoes
05 - Garlic
06 - Cumin spice
07 - Chili seasoning
08 - Salt and ground pepper
09 - Red onion
10 - Queso fresco or feta cheese (optional for garnish)
11 - Red, orange, or yellow peppers
12 - Black beans
13 - Extra virgin olive oil

# Instructions:

01 - Boil the orzo until it's firm but not too soft, following the package. Drain it and let cold water run over it to cool down.
02 - Grab a bowl and whisk together garlic, olive oil, lime juice, chopped cilantro, chili powder, cumin, salt, and pepper until smooth.
03 - In a big bowl, toss together the cooled orzo, diced peppers, halved tomatoes, chopped red onion, rinsed black beans, and cheese crumbles (if adding).
04 - Pour the dressing over the pasta mixture and gently toss everything so it's evenly coated.
05 - Put the salad in the fridge for at least an hour. Let the flavors come together before serving cold or at room temp.

02 - Goes great alongside grilled meat or seafood, or have it alone as a light bite.
