Cover baking trays with wax paper and prep coconut into strips.

In a large mixing bowl, toss together the marshmallows and chopped walnuts.

Melt the chocolate as per the instructions on its packaging.

Pour the melted chocolate over the marshmallow and nut mix, and gently stir to combine.

Place portions of the mixture onto the prepared coconut strips.

Sprinkle the remaining grated coconut over the top.

Roll the mixture into logs using the edges of the wax paper.

Refrigerate the logs for about 45 to 60 minutes until they’re firm.

Slice the firm logs into 3/4-inch thick rounds.
