Start by getting your oven going at 190°C, and lay some parchment paper on your baking trays.

Whisk the butter, sugar, and a pinch of salt until it looks smooth and fluffy. This will take around 3 minutes.

Mix in the egg and the vanilla extract until everything’s combined.

Add your sifted flour gradually in three portions. Stir the mix gently each time.

Scoop the dough into a piping bag fitted with a star-shaped nozzle.

Pipe out rosettes or any shape you want, keeping them about 5cm wide.

Pop them into the oven for about 10 minutes. Check that the edges turn golden.

Let the baked cookies cool down fully before adding any decor.

To prepare the ganache, heat the cream and mix it with chocolate in short bursts until melted.

Dip the cookies into the ganache, sprinkle your decorations, and wait for them to set.
