Chocolate Layers Treat (Print Version)

# Ingredients:

→ Chocolate layer for custard

01 - 1 cup heavy cream
02 - 1 tablespoon unsalted butter, softened
03 - 1 teaspoon vanilla
04 - 1/4 cup confectioners sugar
05 - 4 ounces chopped semi-sweet chocolate
06 - 1/2 teaspoon kosher salt
07 - 1/3 cup granulated sugar
08 - 3 large egg yolks
09 - 1 1/4 cups half-and-half
10 - 1 teaspoon espresso powder
11 - 1 1/2 tablespoons cornstarch

→ Sweet vanilla whipped topping

12 - 1/4 cup confectioners sugar
13 - 1 teaspoon vanilla
14 - 1 1/2 cups heavy cream

→ For building the cake

15 - Semi-sweet or dark chopped chocolate for decorating
16 - One package of chocolate graham crackers

→ Whipped cream with mocha flavor

17 - 3 tablespoons chilled brewed espresso
18 - 1 1/4 cups heavy cream
19 - 1 teaspoon vanilla
20 - 1/4 cup confectioners sugar

# Instructions:

01 - Heat half-and-half in a saucepan on medium-low. Separately, mix cornstarch, sugar, egg yolks, and salt until thick. While whisking, gradually add the warm half-and-half into the egg mixture to combine. Pour back into the saucepan, add espresso powder and chocolate, and stir on medium-low until it thickens. Remove from heat, stir in soft butter and vanilla, then let it cool. Fold in whipped heavy cream (1 cup) whipped with some confectioners sugar once it reaches room temp.
02 - Combine vanilla, confectioners sugar, and heavy cream and beat with a mixer. Keep whipping until it holds stiff peaks.
03 - Line a loaf pan (9 x 5 inches) with plastic wrap to make removal easier later. Place graham crackers at the bottom, then spread chocolate custard on top, followed by vanilla whipped cream. Keep layering until full, and make sure it ends with crackers on top. Wrap it tightly and cool for no less than 12 hours.
04 - Combine espresso, heavy cream, sugar, and vanilla in a bowl. Use a mixer at high speed to whip until thick enough to spread.
05 - Flip the chilled cake onto a plate and remove the wrap. Smooth the mocha whipped cream all over the cake's exterior, and sprinkle chocolate chunks on top. Keep it cold before slicing, and serve chilled.

01 - The longer you chill the cake, the better the layers settle.
