Chocolate Candy Cane Cookies (Print Version)

# Ingredients:

01 - 3/4 cup light brown sugar.
02 - 1/2 cup softened unsalted butter.
03 - 1/2 cup shortening.
04 - 1 cup granulated sugar.
05 - 2 large eggs.
06 - 1 1/2 teaspoons vanilla essence.
07 - 1 teaspoon mint extract.
08 - 3 cups plain flour.
09 - 1 teaspoon baking soda.
10 - 1/2 teaspoon fine salt.
11 - 1 cup white chocolate chips, plus extra for garnish.
12 - 3/4 cup crushed peppermint candy.

# Instructions:

01 - Get your oven ready at 175°C and line baking trays with baking paper.
02 - Whisk together the sugar, butter, and shortening until the mixture is smooth and creamy (takes about 2 minutes).
03 - Stir in vanilla, mint, and mix in each egg one at a time.
04 - Gradually add flour, baking soda, and salt while mixing at low speed.
05 - Fold in the crushed peppermint candies and chocolate chips.
06 - Shape dough into balls using about 1 to 1.5 tablespoons of batter per ball.
07 - Arrange the dough balls on the trays with a gap of 5 cm between each.
08 - Bake for 8–10 minutes, or until the tops look firm.
09 - While the cookies are warm, press some extra white chocolate chips on top.
10 - Leave them on the tray for 10 minutes, then move them to a cooling rack.

# Notes:

01 - You can make big cookies with around 3 tablespoons of dough per cookie.
02 - Freeze the dough for up to 2 months if you're saving it.
03 - Perfect as a thoughtful gift for the holidays!
