Slice the steak into thin strips. Stir in all the marinade ingredients. Let it soak up the flavors for about 15 minutes.

Stir together all the sauce ingredients in a small bowl. Keep it handy for later.

Crack the egg into the marinated beef. Mix to coat the strips evenly. Toss them in corn or potato starch, separating each strip so nothing sticks. Shake off the extra flour before frying.

Heat oil at high temperature around 350°F. Fry the coated strips for 1-2 minutes till crispy. Remove from the pan and drain on a rack or paper towels.

Bring a wok or pan to medium-high heat. Pour in a bit of oil, toss in the chopped onions, and stir briefly. Add sliced bell peppers, blending them together.

Toss the fried beef into the veggies. Pour the sauce in, sprinkle the fresh chilies and spring onions. Mix quickly on high heat for a minute or two.
